Personally I use a 5v-3.3v adapter and a single 5v supply for most remote xbees. These http://www.ebay.com/itm/XBee-Pro-Breakout-Board-3-3V-5V-MCU-Pitch-0-1-DIP-Adapter-w-3-LED-Indicator-/370779189158?pt=Vintage_Electronics_R2&hash=item5654296fa6 have worked well. Since the input on the SainSmart is looking for a 5v sink thru 2 LED's it should work fine at the xbee voltage, if not adding a transistor would take care of it.
