Hendrik,
First off, is the Mac Mini showing up in the Shared section of the sidebar?
I’m no uber-techie, but as an example, I connect my raspberry Pi via Chicken of the VNC, and I usually access it through the IP address and port of the device. If I have a power out or disconnect it, occasionally changes the IP address.

I haven’t tried it, but it does seem to work for a good number of people. Thinking of doing it with an old snow globe Mac I have.
